Meditterranean Chicken and Rice


1 cup yogurt

1/4 cup lemon juice

1  teaspoon apple cider vinegar

1/2 teaspoon salt

1/2 tsp sugar

2 pounds chicken thighs

1/4 cup olive oil

1/4 cup lemon juice

4 cloves minced garlic

1 teaspoon dried oregano

2 teaspoons ground coriander

1 1/2 teaspoon salt

1/4 teaspoon pepper

2 tablespoons butter

1 1/2 teaspoon turmeric

1 teaspoon cumin

1/2 teaspoon salt

2 cups long grain rice

2 cups chicken stock



Mix yogurt, lemon juice, apple cider vinegar, salt and sugar and put in the fridge.

Marinade chicken in olive oil, lemon juice, garlic, oregano, coriander, salt and pepper overnight and then fry.

Heat pan and put butter, turmeric, cumin, salt and rice.  Pour the chicken broth.  Cover and cook for 15 minutes.

Serve with the fried chicken and yogurt on the side.
