Chicken with Lemon and Mushrooms

3 pounds chicken thighs
high heat oil
medium onion, chopped
2 cups sliced mushrooms
1 tablespoon minced garlic
Himayalan salt
black pepper
1/3 cup lemon juice
1 cup chicken broth


Season chicken thighs with salt and pepper
Add high heat oil to a hot pan
Add the chicken thighs and cook for 7 minutes each side
Remove from the pan and take out some of the oil
In the same pan, add the onion, mushrooms and garlic
Season with salt and pepper
Add the lemon juice and chicken broth
Put the chicken thighs back in the pan
Cover and cook for 15 minutes
